One Bowl Banana Bread

Updated: Jul 21

Recipe 1 of The 100 Recipe Project
Some recipes become household staples almost immediately.
This banana bread started as a recipe I found on Tasty, but after making it a few times I began adjusting it to better match what we like at home. Our version uses five bananas instead of three, which makes the loaf extra moist and deeply banana-flavored.
It also happens to be incredibly simple. One bowl, very little cleanup, and ingredients I usually already have in the kitchen make this one bowl banana bread perfect for a quick snack or dessert.
After a few batches and a couple tweaks, this has become the version we keep coming back to.
The Recipe
Ingredients for One Bowl Banana Bread
4 very ripe bananas
1/2 cup melted butter
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 1/2 cups all-purpose flour
3/4 cup chocolate chips
How to Make Banana Bread in One Bowl
Preheat the oven to 350°F (175°C).
Grease a loaf pan - I used butter.
In my KitchenAid stand mixer, mash the bananas.
Stir in the melted butter until combined.
Add the sugar, egg, and vanilla and mix well.
Sprinkle baking soda and salt over the mixture and stir in.
Add flour and gently mix until just combined.
Fold in the chocolate chips.
Pour the batter into the loaf pan.
Bake for 55–65 minutes, until a toothpick inserted in the center comes out clean.
Let cool before slicing.
Tips for Moist Banana Bread
After making the original one bowl banana bread recipe a few times, I adjusted a few things:
• Increased the bananas from 3 to 4 for a richer banana flavor and softer texture
• Added a little more butter for extra moisture
• Included extra chocolate chips, which my kids strongly support
The extra bananas make the loaf slightly denser but incredibly tender.
Why We Love This One Bowl Banana Bread
This version is extremely moist and full of banana flavor. The top gets lightly golden while the inside stays soft and almost custardy.
It’s also very forgiving. the kind of recipe that works even when you’re measuring loosely or baking with kids nearby.
Family Verdict
This loaf rarely lasts more than a day in our house.
Two slices disappeared immediately after it cooled, and one of my boys asked if it counted as breakfast the next morning.
I’m taking that as a success.
