A relaxed weeknight dinner built around one Costco chicken.
Some nights I cook something elaborate. Other nights I build dinner around something simple and let the table fill in around it.
This was one of those nights.
I picked up a rotisserie chicken from Costco and turned it into a relaxed, family-style dinner with a few easy sides...warm beans from the slow cooker, a big spring salad for the adults, baby carrots for the kids, and sweet mango slices.
Everything goes in the middle of the table, everyone serves themselves, and dinner feels easy.
Sometimes the best meals are the ones that come together this way.
The Table
Tonight's spread included:
• Rotisserie chicken, pulled apart
• Warm marinara with chicken bake rolls from Costco (for the kids)
• Slow cooker beans
• Spring salad with avocado, peas, radishes, and nuts
• Baby carrots with ranch
• Fresh mango slices
• Pellegrino with lime
Family style dinners like this are one of my favorite ways to eat — relaxed, colorful, and everyone finds something they love.
Rotisserie Chicken Family Table
Serves

Main
1 Costco rotisserie chicken, pulled apart
Sides
Chicken Bake Rolls & Marinara
Warm the Costco chicken bake rolls (I got these at the Costco food stand after checkout) in the oven. Slice into pieces and serve with warm marinara sauce for dipping.
Slow Cooker Beans
(Simple and hearty)
Ingredients
2 cups dried white beans
1 garlic clove, smashed
1 tbsp olive oil
½ tsp cumin
½ tsp salt
fresh cilantro (optional)
lime wedges
Instructions
Add beans, garlic, olive oil, cumin, and salt to a slow cooker.
Cover with water (about an inch more water than the beans). Cook on high for 3-4 hours.
Finish with chopped cilantro and lime.
Spring Salad
Ingredients
spring greens
sliced avocado
fresh peas
radishes
chopped nuts (almonds or walnuts)
blue cheese dressing (mine was from Trader Joes)
Toss everything lightly and serve in a large bowl.
Kids Plate
Baby carrots
ranch dressing
chicken bake pieces
marinara
Fruit
Fresh mango slices
To Serve
Place everything in bowls and platters in the center of the table.
Pull apart the rotisserie chicken and pile it onto a serving plate.
Pour cold Pellegrino into glasses and add lime wedges.
Then let everyone build their plate.
Notes from My Kitchen
• The rotisserie chicken and chicken bake rolls makes this dinner incredibly fast.
• The beans are great leftovers the next day.
• The kids loved dipping the chicken bake pieces in marinara.
This is the kind of meal that feels relaxed and generous with the table full, everyone reaching for something different.
