Blackberry Lavender Baked Doughnuts

I’ve never really thought of myself as a baker.
But lately I’ve been in a “why not?” phase, trying things I’ve always assumed were more complicated than they actually are.
When we moved to Franklin, I even started taking drum lessons. I played classical violin through college, but had always thought it would be fun to learn something completely different. It felt like part of the same shift this year...stretching myself a little and having fun doing it.
This recipe came from that same place.
It was inspired by a blackberry lavender doughnut recipe from Tieghan Gerrard’s Half Baked Harvest Quick & Cozy, and it definitely felt like a stretch. Baking, glaze, and flavor combinations I don’t usually work with.
Which made it all the more fun to try.
They’re not perfect, but that wasn’t really the point.
The Recipe
Blackberry Lavender Doughnuts (Baked)
Makes: about 10–12 doughnuts
Ingredients
For the doughnuts
1 ½ cups flour
½ cup sugar
1 tsp baking powder
½ tsp baking soda½ tsp salt
½ cup milk
1 egg
¼ cup melted butter
1 tsp vanilla
½ cup blackberries, lightly mashed
½–1 tsp culinary lavender (lightly crushed)
For the glaze
1 cup powdered sugar
2–3 tbsp milk or cream
½ tsp vanilla
(optional) a little blackberry juice for color
Instructions
Preheat oven to 350°F
In a bowl, whisk together dry ingredients
In another bowl, combine wet ingredients
Stir wet into dry until just combined
Fold in blackberries and lavender
Spoon batter into a greased doughnut pan
Bake for 12–15 minutes, until set
Let cool slightly before glazing.
Glaze
Bring milk to a simmer and add another 1/4 tsp lavender. Let steep like a tea and strain. Whisk together powdered sugar, milk, and vanilla until smooth.
Drizzle over doughnuts.
What I Changed
I kept this pretty close to the original idea, but treated it more like an experiment than something I needed to perfect.
The lavender is subtle, I was cautious with it, and the blackberries add just enough sweetness and color.
How It Turned Out
Soft, lightly sweet, and a little unexpected.
The glaze ended up a bit messy (in the best way), and the doughnuts definitely look homemade, which I’m starting to think is part of the charm.

✔ Felt like a treat without being overly heavy
Notes from My Kitchen
This is one of those recipes that feels like the beginning of something new.
I’m still figuring out baking with the textures, flavors, timing, but I like the process of learning it.
