Wing Night (with Kai)

We made a lot of chicken wings yesterday.
Kai helped me, which automatically made it more fun, and a little messier.
The boys are completely obsessed with wings, and up until now we’ve mostly stuck to our usual: toss them in barbecue sauce and call it a day.
But I came across a Cook’s Illustrated article called “Wing It!” and it opened up a whole new world of flavors.
So, we tried two:
Lemon Pepper and Mango Habanero
Both were worth it.
The Setup
This turned into a full wing night.
A huge platter of crispy wings, two sauces, and a big crudité spread with homemade herby ranch.
The kind of dinner where everyone hovers around the kitchen and eats more than expected.
The Method (Crispy Oven Wings)
This is the base we’ll use again and again.
Ingredients
Chicken wings
baking powder
salt
pepper
garlic powder
Instructions
Preheat oven to 425°F
Toss wings with baking powder mix
Arrange on wire racks over baking sheets
Bake for about 45 minutes, until crispy
Sauce 1: Mango Habanero
This one had more ingredients than I usually reach for, but it was completely worth it.
Ingredients
2 fresh mangoes, chopped
1 habanero chile
1/4 cup water
apple cider vinegar
brown sugar
ketchup
1 shallot
2 garlic cloves
1 tbsp white miso
fresh thyme
salt + pepper
Instructions
Combine everything in a saucepan
Simmer until softened and fragrant
Remove thyme
Blend until smooth
Toss with hot wings
Flavor: sweet, tangy, just a little heat but not overwhelming
Sauce 2: Lemon Pepper
This one felt more familiar, but still elevated.
Ingredients
butter, melted
black pepper
garlic powder
onion powder
ground coriander
salt
turmeric
chile flakes
mayonnaise
white miso
lemon zest + juice
Instructions
Whisk everything together and toss with wings.
Flavor: bright, savory, and addictive
Herby Ranch Dressing
This might have been the quiet favorite of the night.
Ingredients
mayonnaise
sour cream
buttermilk
fresh dill
fresh chives
1 garlic clove, grated
white vinegar
garlic powder
onion powder
salt
Instructions
Mix everything together and chill before serving.
The Table
We served everything with:
• celery
• carrots
• ranch dressing
• a very large pile of wings
What I Learned
The baking powder method really works. The wings came out crisp without frying.
The mango habanero sauce was more effort than I usually put in, but it changed how I think about wings.
Family Verdict

✔ Kids loved both sauces

✔ Will absolutely make again
Notes from My Kitchen
Cooking with Kai made this one feel like more than just dinner.
It turned into a little project of trying new flavors, tasting as we went, and building something together.
